Through lectures, discussion, assignments and field trips, students are introduced to the role of the Food and Nutrition Manager in health care facilities and other food service industries.  Students gain an overview of the health care facility and the interrelationship of Nutritiion Services to other departments.  Food service systems, the function of the food service department and legislation that relates to this field will be discussed.  The Global Citizenship and Equity portfolio will be introduced.
