Description: This 14 week course provides students exceptional experiential learning by working in Centennial College’s “The Local” restaurant, a full service dining room and take away enterprise open to the general public. Students are provided the opportunity to rotate through each station of the kitchen to gain a comprehensive understanding of restaurant job responsibilities and duties as they pertain to day to day operations. The focus of this course is to reinforce practical and theoretical skill sets learned in-class; to expose students to real-world kitchen experiences and service excellence while serving restaurant patrons. Attendance and active participation is crucial in successful completion of this course. By successfully completing this course students will have gained necessary experience and skills to develop work plans, master culinary techniques, apply advanced methods of preparation, work in a timely manner and present and taste food suitable for a restaurant setting, in preparation for successful employment in today’s food service industry.
