Restaurant Culinary Operations

This course will focus on developing work plans, mastering culinary techniques, applying advanced preparation methods, working in a timely manner, and presenting and tasting food suitable for a restaurant setting.
Those taking the 14-week course in person will work in Centennial College’s The Local restaurant, a full-service dining room and takeaway enterprise open to the general public. They will rotate through each kitchen station to gain a comprehensive understanding of restaurant job responsibilities and duties, as they pertain to day-to-day operations. Attendance and active participation will also be crucial for online learners. In a digital format, they will complete interactive activities. They will also complete activities in their own local communities.
