This course builds on the research concepts and skills developed in Specialty Tourism, Research & Trends through a detailed exploration of the role of food and beverage both as a driver and motivator of tourism both in Ontario and around the world. Given the paramount role of food and beverage as an area of tourism employment, spending and motivation, students will critically analyze a variety of dynamic food and beverage tourism niches and case studies from perspectives such as tourism product development, enhancement and marketing.
