Description | FST 324 examines the importance of Food Safety Management Systems in the production of safe food in the Canadian food manufacturing sector. Students explore in-depth the concept of the HACCP (Hazard Analysis Critical Control Points) focusing on biological, chemical, and physical hazards, hazard analysis and food safety risk assessments techniques, and critical control points. Building on FST 223 Quality Assurance I, FST 324 provides theoretical concepts and practical experience in the development of food safety management system documents. Students develop a complete HACCP plan based on the Codex Alimentarius and the CFIA’s Preventive Control Program requirements using the Food Safety Enhancement Program documents. Learning methodologies include a variety of techniques, including group work, individual assessments, in-class learning, case studies, and guest speakers. FST 324 is an accredited HACCP training program with the International HACCP Alliance. Upon successful completion of FST 324 as per Centennial College Policies, students will receive a HACCP Certificate of Completion bearing the International HACCP Alliance seal. |
