FST 324 examines the role of food safety management systems in the food industry, focusing on the Hazard Analysis Critical Control Points (HACCP) system. Using HACCP as a guideline, this course examines the food safety requirements focusing on hazard identification, analysis, and appropriate control measures. Building on FST 223: Quality Assurance I's focus on prerequisite programs, FST 324 provides theoretical concepts and practical experience in the design of food safety management systems using the Canadian Food Inspection Agency's Preventive Control Plan requirements as a guide.
