Description | This is the continuation of FOOD 707 Gastronomy Taste & Place I. This course further examines the role of food and drink and the food habits and preferences that influence customer choice. Emphasis will be placed on the importance of the entire customer environment, including the sensory influences people use when deciding what to eat or drink. Students will continue to advance their discovery of how to connect tourism consumers with destinations’ local eating and drinking behaviours. The next stage of local tastes will be identified as marketing opportunities and will contribute to the overall food tourism business concepts. |
