Explore international cuisine utilizing ethnocentric flavours and ingredients. By building and developing advanced culinary theoretical knowledge and skills, this 14-week course will teach students to successfully work in a timely manner, and create, present and taste food representative of global cuisines.
The course’s in-person version will feature professor-led demonstrations and practical labs. Students will apply advanced preparation methodologies utilizing emerging technologies and equipment, and have the opportunity to practice various contemporary plate presentation styles. The online version of the course will ensure an interactive experience by employing videos and other digital tools. It will also require students to send in their own culinary videos.
