A menu is not simply a list of foods available for purchase; it is the engine that drives the restaurant. An effective menu is a sales tool, a marketing tool and a control tool. Without a successful menu, a restaurant will quickly run out of steam.

Participants in this practical, hands on course will examine the concept of the menu as a marketing tool, it's design and layout and how to evaluate it's effectiveness and profitability.
