Description | This course introduces the principles of nutrition as they relate to health and well-being. Students will identify and learn about essential nutrients and their contribution to good health. In addition to this, students will apply nutrition knowledge to healthy menu planning with attention to dietary modification for special diets and sustainability principles for the health of the food system. Topics covered include an examination of primary nutrients, specialty diets, sustainable nutrition, food security, nutrition labeling and health claims, culturally diverse eating patterns, and nutritional needs throughout the life cycle as recommended by dietary guidelines of Health Canada. It is designed to promote an awareness of and an introduction to the fundamentals of nutrition for culinary professionals. |
