Description | This course introduces the basic principles of planning and designing a restaurant and kitchen. Students will learn the conceptual approach to planning a facility with guest appeal as the primary goal. Students will examine planning guidelines, municipal codes, and interior design for food service operations. Students will design a restaurant and kitchen by selecting the furniture and equipment, completing drawing to scale calculations, and incorporating interior design. |
